This onion spread is a classic French preserve with an Italian twist. Sweet onions are slow cooked in olive oil then preserved in balsamic vinegar. This is a wonderful preserve served along side roasted meats or fish. It is luxurious on burgers and fabulous with hor d’ouvers or with a cheese plate.
